Cabbage, folks love to hate it.

Cabbage is one of those vegetables that people either love or hate.  Many times when someone tells me they do not like something, as far as food, I usually think or can help them trace that memory back to the meal that left them with that impression.  In most cases it was because the meal in question was cooked poorly and not done well.  For this very reason I will almost always try everything again and again, even if I do not like it, so that I can allow myself the opportunity to begin to enjoy something that I previously thought tasted horrible.  It is that challenging yourself and your belief systems type of attitude and approach to life that...

Coconut Milk Biscuits

On my way home from work yesterday I really got the craving for some biscuits.  It is kinda weird for me because I haven't really craved baked goods in a long time, but I decided to honor my craving.  I was looking online for a recipe but they all had coconut flour in them and we were all out.  So I just decided to make my own up and see how it went.  I meant to use tapioca flour in it but accidentally added arrowroot instead.  They ended up turning out great so I decided to share the recipe. Apricot Energy Bars

There are a lot of things I enjoy eating that I would rather not try and make into a shelf stable packaged product for sale.  One of them that we make often is Apricot Squares.  The reason I wouldn’t want to sell them is due to the fact that they have eggs in them.  At home we put eggs in about everything that we make/bake.  Eggs add a tremendous amount of healthy fats and nutrients.  They also act as a binder and create moisture in the finished product.  Eggs will also help create a fluffier end product, especially in grain free baking.  You will need the following: ·         8 Inch pan lined with foil that has been greased with butter...

Scones, Grain and Dairy Free

Being grain free used to limit your ability to eat bread like snacks and treats but, thanks to all the awesome food bloggers these days we have so many options now.  This is a scone recipe that I have been tweaking.  I just used multiple recipes online and tweaked them until I found one that worked for me.  It does include arrowroot flour, which I like to use minimally because I can sometimes feel it a bit hard on my body and digestive system.  But every now and then it is good to indulge yourself.  Especially if you have been good for a long time and done enough healing that a few cheats don't really set you back.
