Easy Paleo Breakfast

I am always looking for ways to spice up my morning breakfasts but still have them be quick and easy to prepare.  I don't know why I put this combo together but I did and it is really wonderful and full of healthy fats and protein.  And it only takes a few minutes to prepare.

You will need the following:

2 Eggs beaten

Tuna - canned


Mayo - homemade if you got it!

Just heat some coconut oil or other fat in a saute pan.  Scramble the eggs and add as much tuna as you like.  A few tablespoons of capers and a few tablespoons of mayo.  Just mix well and enjoy.  You can add salt and pepper if you like.  It won't take much because the capers will act as a salt substitute.  I always add a little salt and pepper to the eggs while I am beating them though.  You should put enough mayo in that it is a creamy concoction.  I usually only cook the eggs in a pan and then add the other ingredients in the bowl I will be eating them in.  If you add them all to the pan they will be nice and hot, but it is your call.

My wife thought this was gross until I made her a plate one morning.  She was pleasantly surprised. Nice and inexpensive too.  Enjoy!
